I am American in Canada working on a Visa. My personal vehicle is still plated in the US. I have a Canadian Fiancé who holds a valid Canadian Drivers License. Is there an insurance company that will allow me to include her on my policy to drive my car without me plating the car in Canada?

It’s not the American insurance company that you’re dealing with her (so the short answer is ‘no’).
In Canada the law requires you to plate where you live within a limited timeframe – it may be as short as 30 days. So what you should be looking for is a Canadian company to license both of you.
I know that US car insurance can be less expensive that Canadian insurance in some instances. Still, even the US insurance company is likely to be reluctant to do what you’re looking for – they all want to insure you where you live. An American insurance company should be reluctant to insure you when you’re living in Canada.
